Bramble pudding

You'll need:

500 g brambles
150 g sugar
Juice from half a lemon
8 g powder gelatine, soaked in 2 tablespoons of cold water
1/4 L whipped cream
2 whipped egg whites

Our tip

You can use frozen brambles or other fruits, e.g. blueberries, red or black currants etc.

Preparation

  • Step 1

    Warm the brambles in the lemon juice for 10 minutes or so at low heat.

  • Step 2

    Allow to cool and sieve into a bowl.

  • Step 3

    Stir the gelatine over a hot water bath until dissolved.

  • Step 4

    Mix the gelatine into the brambles.

  • Step 5

    When it begins to solidify, gradually mix in the cream followed by the egg white.

  • Step 6

    Fill into a bowl or individual portions and chill for 2 hours in the fridge.
